    Depends on what you want to spend, but people usually expect a beef carving station, and maybe ham or turkey.
    I reckon it’s dull but people do like it.
    A pasta bar can have 3 types of pasta and chefs can add sauces or pasta can be premade and guests help themselves. The fewer the chefs the lower the cost of course.
    After that a sushi station ( you’ll need 3 chef’s just for that for 200 guests) is well loved, or a Yakitori grill,as well as a Taco bar. Try Beef Chix and Fish or Shrimp Tacos. Try a raw seafood station with piles of cooked Kiwi mussels (Greengage) , Oysters (preopened) and Shrimp.
    It it’s outside just a huge grill with BBQ might be enough if there is diversity like sausage, beef, chix , ribs etc.
    Or a habitual NE clambake. You need a caterer who knows how to do this but you get seafood, chicken, hot dogs, chowder, and corn. It’s different fun and everyone gets to wear a bib.

    I suggest hot pasta stations, with 3 or 4 sauces, meats, and a bunch of different kinds of pasta.

    Carving stations: prime rib, ham maybe turkey.

    As for the rest of the buffet, I suggest lots of different foods that you like.
